On May 22nd we attended “Forni e Fornai • e”, the festival dedicated to bread and wheat, organized by the Grano Alto Community. During the initiative, which took place in Monghidoro in the province of Bologna, we followed the scribing of various workshops aimed at the bread community: what are the right terms to use when talking about raw materials? How is the price of bread determined? How can we find healthy and sustainable alternatives to the flours used by industry? We have summarized these and many other questions (and answers!) on our panels.
